Vada-Pav- The good old Indian Burger!

I cant say enough about this extremely popular snack in India especially in the state of Maharashtra. Vada paav, Pav Wada, Batata Vada are just different names for the same dish, where the Vada means a Potato Patty in the shape of a ball and Pav means dinner bun or burger bun. The minute I land at Mumbai airport, and smell the familiar air, I start craving for a vada pav . And as you would have it, on the drive home if you stop at a diner or a gas station with a fast food joint alongside, you can order a vada pav with some cutting chai (which is basically chai tea served in a small glass) and you are Home!! It’s been six months since I relocated from Melbourne to Pune, and as I am slowly getting a hang of things in India, getting my confidence back, being fearless while crossing the road, having all my senses on high alert at all times, the one thing that I have been on the lookout for is GOOD COFFEE. Veg Barbeque Veggies and Cheese: 250 gm. Paneer or Hard Cottage Cheese 250 gm. Tofu marinated in sweet chilli sauce 1 Large Green Capsicum or Red or Orange Tomatoes, deseeded, cut into cubes (optional) 2 Onions cut into large chunks Marinate: 1. Dry Rub: 1½tsp.Cumin Powder 1½tsp.Coriander Powder 2tsp.Tandoori Masal 1-2tsps.Red Chilli Powder 1tsp.Paprika 1tsp.Mustard powder 1-2tbsps.Sweet Chilli Sauce 1tsp.HotSauce (optional) 1-2tbsps.Garlic paste Olive oil Salt to taste 2. Coriander Mint Chutney

Ingredients: 1 Cup Coriander 1/4 Cup Min Leaves 1 Dry red chilli 1/4 Cup Dry Dessicated coconut Salt to taste 1/4 Cup roasted peanuts 2 Garlic pods 2-3 tbsp Oil Method: In a blender add the peanuts, garlic pods, chilli, coriander, mint and coconut. Add some oil for blending and not water. Using oil will ensure longevity of the chutney. Do not add salt while blending. Decant the mixture to a bowl and then season with salt. Slice Cake from My Childhood

Do you guys remember the Monginis slice cake that was available back in India? It was one of the most delicious little thing that I used to love, as I never liked the frosting or icing on cakes. I still don't have a sweet tooth, unlike Mr. N, so for me cakes like these are perfect treats. I was having coffee one day at home, and I wanted something with it. Of course if you live or have been to Australia, you will know Tim Tam's work perfectly with a cuppa, but I wasn't looking for anything chocolaty. That's when my taste buds went back to the Monginis Slice Cake....Yellow with Brown borders, nicely sealed in small packets, ready to go. Birthday tradition

In India we always have two different days or dates for our birthday, which means you celebrate your birthday twice. Now who will not like that :D. One according to the English calendar and one according to the Hindu calendar. The difference is our birth dates remain constant per the English calendar, but the dates change if we follow the Hindu calendar ( which everyone in India does & is considered more auspicious) according to the placement of the stars on the day we were born. Sweet Semolina or Suji ka Halwa or Sheera All you brisbaneites, If you enjoy the desert at Govinda's , you now know how to make it at home. Yes this is the recipe!! Serve this with some custard or just as it is. Ingredients: Serves 2-3 1Cup Semolina or Rawa 4 Tbsps. Lasuni Methi or Fenugreek leaves cooked with garlic

Okay so a lot of people will scream at the thought of eating fenugreek leaves, but they are my absolute fav vegetable. My Mom makes the best methi sabji, I cannot recreate it although I have tried many times, so now I have my own version. Ingredients: 1 packet frozen methi leaves (I get these from my local Indian grocery store) 1 Bulb of Garlic, the more the better 1 Onion finely chopped 2 Dry Red Chillies 1.4 tsp. Turmeric powder 1 tbsp. Coriander powder 1 tbsp. Goda or Garam Masala 2 tbsp. Oil Water for cooking Salt to taste Method: Remove the methi packet from the freezer 15-20 mins before adding to the dish. Spaghetti with garlic & peanuts aka Spaghetti Aglio e Olio

This is one of the easiest & tastiest comfort food recipes that I am so happy to have in my repertoire. I wasn't sure if I should share this recipe as it’s too easy & not really curry based, however a lot of you liked my earlier spaghetti recipe, so I thought I should share this one. Now you might not enjoy the combination of garlic & peanuts drenched in olive oil, but if you are like me you will fall in love with this combination. Ingredients: 8-10 Garlic cloves- sliced ¼ Cup Olive oil Spaghetti ( as much as you like, I use a big handful for two people) ¾ Cup roasted peanuts or ground peanut powder 2-3 tsp.
