Indian Burger or Vada Pav or Wada Pav |
Ingredients & Method: Makes 8-10 Vada’s
1. To make the Vada’s or Burgers add all the following ingredients in a large bowl.
- 2 Large potatoes- Peeled, boiled, cooled and mashed
- 5 Cloves of garlic, finely chopped
- ½ inch Piece of ginger – Peeled and finely chopped
- ½ cup Fresh coriander leaves, chopped
- 2-3 tsps. Lime or Lemon juice
2. To the above mixture,add tempering.
To make the tempering, heat 2-3 tsps. oil in a pan.
Add the following ingredients and cook for 2-3 mins.
- 2 tsps. Black mustard seeds or Mohri
- 6-8 Dry green curry leaves
- 1-2 Fresh red or green chillies
- 2 tsps. Turmeric powder
- 2-3 tsps. Red chilli powder
3. Once the potato mixture and tempering are mixed, combine by
kneading together. Divide the mixture and roll into 8-10 golf size balls.
4. To make the batter mix all the following ingredients
together.
- 1 cup Gram flour or besan
- A pinch of soda bi carb
- 2-3 tsps. Cumin powder
- 2-3 tsps. Red chilli powder
- 2 tsps. Turmeric powder
- ½ cup Water
5. Heat oil in a deep fry pan. Test the oil by adding a little
bit of the batter, if it sinks first and floats right up the oil is ready.
6. Now dip the potato balls in the batter. Shake off any excess
batter and add to the hot oil. Add 4 balls at a time and fry till they are
slightly golden brown.
7. Decant on a tissue paper.
8. Serve with tamarind chutney or red dry garlic-onion chutney,
stuff the balls in between 2 slices of bread or a bun.
Eat to your heart’s content with some hot chai!!
