You can frost this if you like with some chocolate or caramel sauce.If you are making it for Halloween you can also decorate with some candy or other Halloween decorations.
I like to serve it as is, for a nice breakfast, with some hot chai.

Ingredients:
- 1 cup pumpkin puree
- 1 cup sugar
- 1 cup veg oil
- 1½ cup self raising flour (if you are using plain flour or maida make sure to add some baking soda & powder, about ½ tsp each)
- 1 banana
- ½ Cup cocoa powder
- 2 tsp. vanilla essence
- Pinch of salt
To make the pumpkin puree:
- Wash, peel and dice the pumpkin into small cubes. User about 1 cup of pumpkin cubes.
- Heat a pan, Transfer the pieces along with 1/2 cup jaggery or a cup of brown sugar.
- Cover and cook for 5-10 mins or until the pumpkin cooks through.
- In a large bowl add the oil, sugar and vanilla. Whisk together till combined.
- Next add the banana and pumpkin puree. Whisk again till a smooth mixture is formed. The banana helps to bind muffins and acts as a substitute to egg.
- Now sieve the flour, cocoa powder and salt. Add the dry ingredients to the wet. Combine gently till a smooth batter is formed.
- Line a muffin pan with liners and scoop about a tbsp or the batter into each muffin case. Use a ice-cream scoop or a 1 tbsp. measure to transfer the batter.
- Bake in a pre-heated oven for 25 mins or until a toothpick inserted into the center of the muffin comes out clean.
