Yummy Tomato Soup





Ingredients: Serves 2-3

  • 6-7 Medium sized tomatoes
  • Olive oil
  • 6-8 Garlic cloves
  • 2 Dry bay leaves
  • 3 Small shallots or Spring onions
  • 5 Black pepper corns
  • Salt to taste
  • Water

Method:

  1. Wash and cut the tomatoes into halves
  2. Line them on a baking tray. I use the disposable foil trays for this
  3. Drizzle  some olive oil over the tomatoes
  4. Scatter the garlic cloves, pepper corns, spring onions, salt and bay leaves over the tomatoes
  5. Sprinkle some coriander powder and dry parsley. If you have fresh coriander use that
  6. Bake in a pre-heated oven at 220 degrees for 30 minutes
  7. Remove the tray from the oven. Check that the tomatoes are cooked and mushy
  8. Blend in a blender. Add some water to help with the blending if needed
  9. Strain the mixture through a strainer and transfer the red soup to a pan. Simmer the soup for 5 minutes, check seasoning and add water or fresh cream to get a soup like consistency
  10. garnish with some crushed black pepper 

I love this soup. To have this after a long day at work is a treat. Add croutons if you want to make it into a meal

hey nev, you can also sautee about 1&1/2 tps cornflour in 1 tps butter add 1/2 cup of milk to it, bring it to a boil and add the mixture to the simmering soup for a better consistency / taste, if fresh cream not available. It was my mom's way.... :) Also a little sugar if the tomatoes are too sour. Just love your recipes and enthusiasm .... looking forward to many more.
