Yummy Tomato Soup
Ingredients: Serves 2-3
- 6-7 Medium sized tomatoes
- Olive oil
- 6-8 Garlic cloves
- 2 Dry bay leaves
- 3 Small shallots or Spring onions
- 5 Black pepper corns
- Salt to taste
- Water
Method:
- Wash and cut the tomatoes into halves
- Line them on a baking tray. I use the disposable foil trays for this
- Drizzle some olive oil over the tomatoes
- Scatter the garlic cloves, pepper corns, spring onions, salt and bay leaves over the tomatoes
- Sprinkle some coriander powder and dry parsley. If you have fresh coriander use that
- Bake in a pre-heated oven at 220 degrees for 30 minutes
- Remove the tray from the oven. Check that the tomatoes are cooked and mushy
- Blend in a blender. Add some water to help with the blending if needed
- Strain the mixture through a strainer and transfer the red soup to a pan. Simmer the soup for 5 minutes, check seasoning and add water or fresh cream to get a soup like consistency
- garnish with some crushed black pepper
I love this soup. To have this after a long day at work is a treat. Add croutons if you want to make it into a meal
