Sabudana vada or Sago Cutlets

Ingredients- serves 2
  • 200 gms or a cup of Sago or sabudana
  • 1 bunch of chopped coriander leaves
  • ¾ cup peanuts- roasted and crushed in a blender to form a nice smooth powder
  • 1-2 tsps. Salt
  • 1 cup of oil for shallow frying
  • 3-4 Chopped green chillies or just use 2 tsps. Red chilli powder
  • 2 tsps. Cumin seeds or Jeera seeds
Method:
1. Soak the sago or sabudana overnight or for 8 hours in ½ cup water. Adjust the water if using less or more sago. The idea is to have enough water to barely cover the sago balls. Do not add more water or they will go soggy
2. After 8 hours transfer the sago into a big mixing bowl and add all the ingredients in the bowl.
3. Heat oil in a medium or small sized pan
4. Mix everything together
5. Roll the mixture into small balls. Flatten them like cutlets as you go and place them on a grease proof paper or sheet
6. Check if the oil is hot. Now add 2-3 flattened cutlets or sago balls into the oil
7. Fry them on all sides till they get a nice reddish brown colour
8. Remove  and place on a few sheets of tissue papers to absorb the extra oil

Serve hot with plain yogurt and ketchup or any chutney of your choice. Goes well with a nice cup of chai tea.
