Pohe
Chivda or Flat Rice Snack
Healthiest, Lightest, Tastiest, Fastest snack I can think of....Try it and you will LOVE it
- 500 gms. Thin Flat Rice Flakes or Thin Pohe ( available at all indian grocery stores. Make sure to use the thin variety of pohe for this dish)
- ¾ Cup Roasted Peanuts
- ½ Cup Roasted Chana or Gram Dal
- 10-12 Green Curry Leaves
- 6-7 Green Chillies
- 5 Tbsps Oil
- 3-4 Tsps. Mustard Seeds
- 4 Tsps. Turmeric Powder
- 2 Tsps. Red Chilli Powder
- 1 Tsp. Asafoetida or Hing
- 1-2 Tsps. Sugar
- 2 Tsps Salt Adjust to taste
Method:
- Roast the rice flakes in batches of 2 or 3 depending on the size of your microwave. Put the rice flakes in a microwave safe dish and cook them for 2-3 mins on high. Do this is batches so that the flakes are evenly roasted
- In a large pan add the oil. Apply heat, when the oil is ready add the mustard seeds and asafoetida. Shake or mix well
- Add curry leaves and green chillies and stir everything together
- Lower the heat to low or medium heat for rest of the recipe. It is very important to roast these spices well and not to burn them
- Now add the roasted peanuts and chana dal. Roast for 4-5 mins
- Add turmeric, chilli powder and some salt. Stir or mix everything together to coat everything well with the spices
- After roasting for 7-10 minutes on a low heat, add the rice flakes or pohe
- Gently mix everything together making sure the flakes are coated well in the spice mixture
- Continue mixing and roasting for another 5-7 minutes till you get a nice aroma and everything is crispy and yellow
- Turn the heat off and let the mixture cool for 10 minutes
- Add the sugar at this time and season with salt according to your taste
This snack stays well for a month if stored properly. Can be eaten as it is or with some freshly chopped onions and a squeeze of lemon
Goes very well with tea/evening drinks
