Simple Chicken Curry

OMG this recipe, which I concocted after watching a few videos online, is life saving. Its ready in no time, needs a handful of ingredients and tastes delicious. It is Mr N's all time favorite. Also its light weight and you really taste the meat. 
So here goes..my simple chicken curry...

Ingredients:
  • 2 Large onions finely chopped or sliced 
  • 2 Dry red chilies 
  • 6-8 Garlic cloves
  • 1-2 tbsp. Oil 
  • 1/2 tsp. Turmeric Powder 
  • 500 or 750 gms Chicken 
  • 2-3 tsp. Cumin powder 
  • 2-3 tsp. Coriander powder
  • 3/4 tbsp. Garam masala powder
  • 3 tbsp. Greek or any thick yogurt or water 
  • Crushed black pepper 
  • 1/2 tsp. Lime juice or Amchur (Dry mango) Powder
  • Fresh Coriander Leaves for garnishing 
  • 1/2 tsp. Kasuri methi or dried Fenugreek Leaves (optional) 
  • Salt to taste
Method:
  1. In a pan heat oil. Add onions cook till onions are slightly browned.
  2. Crush the chilies and garlic in a blender or mortar and pestle. Add the crushed mixture to the onions.
  3. Add the chicken and cook till tender for 10-15 mins. Cover the pan while cooking.
  4. Open the lid and add all the spices- turmeric, chili, coriander and cumin powder.
  5. Mix well and cook for another 2 mins. Add the garam masala powder,salt and pepper as per taste. 
  6. Check seasoning and add any of the spices if needed.
  7. Add some water or the yogurt to make the gravy. If you don't like Aai g yogurt just use water and dilute as per your liking.
  8. Next add the lime juice or amchur powder and dried fenugreek leaves and mix. Garnish with coriander leaves.
  9. Check if the chicken is cooked all the way. If needed cook further with the lid on.
Serve with some nice Rotis or Paratha.
