Basil Pesto

  • 1 or 2 cups Bunch of basil leaves
  • 1/2 Cup roasted peanuts  
  • 2 tbsp. Olive oil 
  • 5-6 Garlic Cloves 
  • 1/4 Cup Grated Parmesan or Cheddar 
  1. Wash the basil. 
  2. In a blender add the basil, peanuts, olive oil and garlic cloves. Since I love garlic I add 5-6 cloves, you can add fewer and it will still taste fine. 
  3. Blend to a paste. 
  4. Next add the cheese & give it one more blitz. The cheese adds the saltiness to the pesto, so no need for extra salt. 
Basil pesto is ready. I love to serve mine with pasta, sandwiches or veggie pizza.
