- 1 or 2 cups Bunch of basil leaves
- 1/2 Cup roasted peanuts
- 2 tbsp. Olive oil
- 5-6 Garlic Cloves
- 1/4 Cup Grated Parmesan or Cheddar
- Wash the basil.
- In a blender add the basil, peanuts, olive oil and garlic cloves. Since I love garlic I add 5-6 cloves, you can add fewer and it will still taste fine.
- Blend to a paste.
- Next add the cheese & give it one more blitz. The cheese adds the saltiness to the pesto, so no need for extra salt.
