Breakfast in bed-Homemade Pancake Recipe


If you need a continental breakfast in minutes for a special occasion such as valentines day or a  breakfast in bed kind of day, try this hassle free pancake recipe. Oh, and the peach/berry syrup adds a personal touch, and makes it standout.Enjoy yourself, or treat that special someone, who will appreciate your love and effort. 

Ingredients: Makes 6 large or 8-10 small pancakes 

For plain pancakes: 
  • Use 3/4 cup whole wheat flour and 1/4 cup plain flour (if you dont have whole wheat flour just use 1 Large cup of plain all purpose flour or maida)
  • 3 tbsps. Sugar
  • ½ tsp. Each Baking soda & powder
  • 1tbsp. Melted butter 
  • ½ cup. Milk 
  • 1 Egg (optional) 
For Banana pancakes:
  • 3/4 cup whole wheat flour and 1/4 cup plain flour 
  • 1 Egg
  • 1 Cup low fat milk 
  • 1tbsp. Melted butter 
  • 1-2 Mashed bananas ( you can use ½ cup mashed strawberries or blueberries as well)
For the syrup:
  • Maple syrup 
  • Fruit or berries of your choice- peaches, strawberries 
Method:
  1. To make plain pancakes, mix the flour, baking soda & powder, sugar,butter, milk, egg and mix well. 
  2. Ladle spoon full of mixture on a hot pan or girdle, the size of each pancake will depend on how much batter you apply to the pan. 
  3. Cook for 2 minutes on each side. 
For banana pancakes

  1. Sieve the flour in a large bowl. To that add the egg, milk and mashed banana or berries. 
  2. Whisk well to form a smooth batter. 
  3. Ladle spoon full on a hot skillet lined with some butter. 
  4. Cook for 5 mins, these take a bit longer due to the whole wheat flour. 
To make the syrup:

  1. Squeeze out any amount of maple syrup you like in a thick bottomed pot. To that add the fruit of your choice and let it come to the boil. 
  2. Remove from heat. Let it rest for a few minutes. Transfer to a milk pot of serving ware with a sprout. 
  3. You can use honey instead of maple syrup with some grated apples. Tastes really good. 

Stack the pancakes on a plate, pour the syrup and eat to your hearts content.
