Thai flavored Sweet Potato & Carrot Soup
Ingredients:
- 1 large sweet potato chopped in chunks
- 3 medium –large carrots chopped in chunks
- 2tbsps. Thai Curry paste
- 2-3 tbsps. Brown sugar
- 1 lit Vegetable stock
- Olive oil
- 1 large onion Chopped
- 4 Cloves of garlic
- 1 bunch or 1/2 cup of freshly chopped coriander
Method:
- In a large pan add the olive oil. Sauté the onions. Add whole garlic cloves roast for
a few minutes. Add the thai curry paste. You can use either yellow or red
paste.
- Next add the chopped
coriander. Mix everything together and
cook for 2-3 minutes before adding the chopped sweet potatoes & carrot.
- Turn everything together so that the veggies are coated with
the paste. Now add the stock and simmer on low heat for 10 minutes or untill
the carrots and sweet potato are cooked & are soft.
- It is better to add the carrots before the sweet potatoes as
they take longer to cook through.
- When the veggies are cooked, let the mixture cool for 5-10 minutes.
Blend in a blender.
Serve garnished with freshly chopped coriander.
