Magnificent salad

This was one of the first recipes I wrote down but never posted it. Made this for dinner today and could not deprive all you foodies from this Magnificient Salad :) 

I created this recipe in summer so I am going to dedicate it to ROTW where is it warm and summery. A simple tasty salad, for the warm sunny days. Make sure you make a nice pitcher of ice tea to go down with it! :)

Ingredients: Serves 2 (variation with pineapple/ walnuts/ mixed nuts)

Salad
  • 1 packet Rocket leaves + Spinach leaves
  • 1 large Tomato diced
  • 2 Cucumbers diced
  • 3 Carrots diced
  • 1 Onion sliced (preferably red onion)
  • 1-2 Beet roots (if available)- grated
  • Croutons
  • Haloumi- 25gm (Paneer also goes well with this salad)
Dressing:
  • 4tsps. Olive oil
  • 3-4 Garlic cloves -minced/grated
  • 1/4tsp. Wasabi paste
  • 1/2 tsp. Paprika
  • 1/4tsp. Cumin powder
  • 1/2tsp. Brown sugar or 1tsp. regular sugar
  • 2 tsp Basil or Pesto paste
  • Salt &Pepper to taste
  • Rice wine vinegar- 2 tsp
  • 1/2tsp.Lemon juice 
Method:
Wash and cut all the veggies. Leave them to chill in the fridge while you make the dressing. Donot add the   croutons and cheese just yet. 


For the dressing:
Mix olive oil, rice wine vinegar, wasabi paste, basil paste, salt, pepper, paprika and grated garlic.Mix well with a fork


To make the croutons:
Take 2-3 slices of bread and cut them into cubes. Roast them in a pan with little oil till they become crisp. 




Assembly:
In a small pan add the haloumi cheese slices and fry them till golden brown on low-med heat. Do not use oil. In a large bowl mix the salad leaves and vegetables and pour over the dressing. Mix well.  Add the haloumi slices and croutons. Serve in a large bowl with a nice cool drink. 
I just love the flavour of haloumi and rocket together. I think rocket is my most favourite salad leaf. This is a very virtuous salad, as I always feel very good after having it. On that note I am going to bed!!
