Green Beans Curry
Ingredients: Serves 2-3
- 1 Bag of Frozen Green Beans chopped or 500 Gms Chopped Fresh Green Beans
- 1-2 Tsps. Oil
- ½ Tsp. Black Mustard Seeds
- 5-6 Green Curry Leaves
- Pinch of Asafoetida
- 2-3 Chopped Red Chillies
- 1 Medium Sized Onion Chopped
- Tsp. Turmeric Powder
- 1Tsp. Red Chilli Powder
- 1½ Tsps. Garam Masala
- 2 Tsps. Coriander Powder
- Water for Cooking
- 1Small can of Coconut Milk or 250 Ml Coconut Milk
Method:
- Heat oil in a pan. Add mustard seeds and asafoetida & curry leaves.
- Mix well. Add the chopped red chillies. Cook them for a few minutes.
- Add the chopped onions. Cook till onions turn translucent or brown.
- Add the turmeric & red chilli powder.
- Mix well. Add the chopped green beans.
- Add garam masala and coriander powder.
- Add the coconut milk. Fill the can of coconut milk with water and add to the mixture.
- Cover and let it simmer and cook for at least 10 mins.
- Check if the beans are cooked through. Make sure they are still a bit crispy. Turn the heat off. Let it continue cooking in its heat with the lid on.
Serve with hot rotis
