Green Beans Curry


Ingredients: Serves 2-3

  • 1 Bag of Frozen Green Beans chopped or 500 Gms Chopped Fresh Green Beans
  • 1-2 Tsps. Oil
  • ½ Tsp. Black Mustard Seeds
  • 5-6 Green Curry Leaves
  • Pinch of Asafoetida
  • 2-3 Chopped Red Chillies
  • 1 Medium Sized Onion Chopped
  • Tsp. Turmeric Powder
  • 1Tsp. Red Chilli Powder
  • 1½ Tsps. Garam Masala
  • 2 Tsps. Coriander Powder
  • Water for Cooking
  • 1Small can of Coconut Milk  or  250 Ml Coconut Milk

Method:                    


  1. Heat oil in a pan. Add mustard seeds and asafoetida & curry leaves.
  2. Mix well. Add the chopped red chillies. Cook them for a few minutes.
  3. Add the chopped onions. Cook till onions turn translucent or brown.
  4. Add the turmeric & red chilli powder.
  5. Mix well. Add the chopped green beans.
  6. Add garam masala and coriander powder.
  7. Add the coconut milk. Fill the can of coconut milk with water and add to the mixture.
  8. Cover and let it simmer and cook for at least 10 mins. 
  9. Check if the beans are cooked through. Make sure they are still a bit crispy. Turn the heat off. Let it continue cooking in its heat with the lid on.


Serve with hot rotis
