Ingredients:
- 1 bunch of long spinach leaves
- Salt & Pepper
- Water
- 2-3 Garlic cloves
- Spices:
- Coriander powder
- 1-2 tsp. Cumin powder
- 1-2 tsp. Chili powder
- 1-2 tsp. Turmeric powder
- Or you can just use 1 tbsp. Mixed spice or Garam masala powder along with the chili & turmeric powder
- Thoroughly wash the spinach leaves to get rid of al the dirt. I don’t chop the stems off, if the spinach is nice & fresh.
- In pot or pan add the washed spinach leaves.
- Cover & cook for 5-8 mins, or until all the spinach is wilted. You don’t need to add any water or salt to the pot. The leaves will wilt down & release their own water. This helps preserve the nutrition in the spinach.
- Take the pan off the heat & let it cool for 5 mins. Add the leaves to a blender with ½ - ¾ cup water along with all the spices, salt & the garlic & blend to a thick soup consistency. You can adjust the amount of water to make it thinner.
- You can also add some sour cream or fresh cream before serving
This is a quick fix, tasty & very healthy alternative to
canned or packet soups.
