Tiramisu - Lift me Up!! Valentines Special

An easy yet delicious Valentines Day Recipe!
Just looking at this lifts up my mood and one bite of this Italian classic, leaves you wanting more. Such a perfect blend of all things rich and strong, just the way I like it ;) 
Do give it a try & enjoy it just by yourself or that some one special with your favorite cuppa!! 

Ingredients:
  • 16 Savoiardi biscuits or Italian lady fingers (they come in packs of 5)
  • 250g or 1 Tub of Mascarpone Cheese 
  • 1 tbsp. Kahlua or Alcoholic Vanilla Extract (if you don't have this, use orange or coffee liquor, bourbon or rum. I got mine from Trader Joe's. You will also need 1 tbsp. plain vanilla extract) 
  • 4 tbsp. Granulated or Caster sugar 
  • 1 Egg yolk (optional) -(transfer the egg whites into a zip lock bag and put it in the freezer, you can use it next time a recipe calls for 1 egg white. I learnt this awesome tip from Nigella Lawson, my inspiration & fav writer) 
  • 1 Cup Espresso or any strong coffee 
  • Strawberries for garnishing 
Method:
  1. Pour the coffee in a bowl to let it cool to room temperature. If you use hot coffee the biscuits will get soggy. 
  2. In a bowl add the sugar, vanilla extract and egg. Whisk till pale. Add the mascarpone and liquor of your choice, along with a few drops of milk to help with whisking. 
  3. Whisk for 5 mins or until the mixture is thick. (Since I used a alcohol flavored vanilla extract, I added mine along with the sugar & egg).
  4. Now for the assembly:
    1. Dunk the biscuits/lady fingers into the cooled coffee. (Dunk them in ever so lightly, as they absorb the liquid quite quickly.)
    2. Place them at the bottom of a loaf pan or any rectangular shaped baking dish. Add as many as needed to cover the entire base. I used 8, 4 on each side. 
    3. Dollop half the mascarpone mixture on the biscuits and spread it evenly to cover all the biscuits. 
    4. Take the remaining biscuits and dunk them into the coffee and place them on top of the mascarpone layer.                                         
    5. Layer with the remaining cheese mixture to cover the top and refrigerate overnight. (or at least for 3 hours) 
    6. Dust some cocoa powder on top before serving
    7. Garnish with a strawberry.The tangy strawberry cuts through the sweetness of the dessert and refreshes your palate. 
This is so incredibly delicious and takes no effort at all to put together. Just make sure you use good quality ingredients and you can wow any body at your next dinner party.  :)
