Namoura- Greek Dessert

I had this for the first time at a Greek restaurant, the review for which is available on my blog.
It immediately reminded me of the semolina cake that my Mom makes. So I decided to recreate it. It is so delicious and filling at the same time.  
Hope you enjoy this easy dessert, only from Nev's Kitchen. 


You will need...
Ingredients:
  • 2 ½Cups (medium)semolina
  • 1 Cup or 200gm unsalted butter at room temp.
  • 1/4 cup Sugar
  • 1 1/2 Cup plain Greek yogurt
  • 1 tsp. Baking powder
  • ½ tsp. Baking soda
  • 1 Cap Vanilla essence (optional)
  • 4-5 Saffron strands (optional)
  • Cardamom powder (optional)
  • Almond pieces to garnish
Method:
  1. Use a 21cm baking dish, it can be round or square. Grease it with butter & keep it ready.
  2. In a bowl add the semolina and scatter the butter through. With your fingertips, mix the butter & semolina, till you get an even mixture that feels like wet sand.
  3. Add the sugar, yogurt and rising agents.
  4. Fold to mix everything with a wooden spoon or spatula. Add a splosh of vanilla if you want.
  5. Transfer the mixture to the prepared baking dish & let it set for 3 hours in a warm dry place. With a knife draw squares on the top & place one almond piece in the center. You can get 20 squares or more, depending on the size of each piece.                           
  6. Preheat oven to 180 deg c.
  7. Bake for 20 mins or until a nice brown color develops on the top & the cake leaves the sides of the baking dish.
  8. While the cake is baking, prepare the sugar syrup. In a pot add 1 cup sugar & ½ cup water along with cardamom powder & saffron strands (optional) for a nice color.
  9. Once the syrup & cake have cooled drizzle the syrup on the cake & let it soak it well.It also creates a nice glaze on the top. 
Cut into 20-25 squares & serve with a nice chai or coffee.
