Absolutely delicious, quick and easy Paneer recipe. Its my mom's recipe and I am in love with it.

Ingredients:
- 450g or 2 cups Paneer- cut into cubes
- 250g Can of Tomatoes or 2 Tomatoes roughly chopped
- 1 cup Finely chopped onions
- 3-4 Garlic cloves (peeled)
- 2 tbsp. Oil
- 1 -2 tbsp each of:
- Coriander powder
- Cumin powder
- Garam masala
- ½ tsp. Red chili powder
- ¼ tsp. Turmeric powder
- Salt to taste
- ½-1 Cup water
- 2 tsp. Butter (optional)
- ¼ cup Thick Cream (optional)
- 1 tbsp. Kasoori Methi (optional)
Method:
- In a blender add the tomatoes, onion and garlic cloves. Blend to a fine puree or paste.
- In a pan heat the oil. You may add some butter at this stage.
- When the oil is hot add the paste. Cook till all water evaporates & oil starts to release from the paste. Keep stirring occasionally. This may take 5-8mins You may cover the pan to avoid spluttering.
- Add the spices (cumin, coriander, turmeric, chili, garam masala) and salt. Mix well. Cook for 2 mins.
- Add the paneer pieces. Coat them well with the gravy. You could pan fry the paneer pieces if you like & then add them to the gravy.
- Next, crush the Kasoori Methi in between the palms of your hands & add to the curry.
- Add about half to one cup water to make a nice gravy. Add more water if the gravy is too thick.
- Mix well & add the cream.
- Check seasoning, if you want to be extra fancy you could add a few tsp. of butter for extra texture.
