Cabbage side dish

Kobi chi bhaji- A quick and easy dish  

When you live away from home you need quick and easy recipes. But the most challenging thing is finding fresh produce and veggies that you enjoy eating. So side dishes like these come in very handy, especially on sunday evening when you need to prepare lunch for next day and are in no mood to cook. Something like this always help. You can use the same recipe for cauliflower, beans or any other vegetables that are available in your super market. 


Ingredients: 
  • 500 g Cabbage (washed & chopped)
  • ½-1 tbsp. Oil 
  • ½ tbsp. Black Mustard seeds
  • ½ tsp. Turmeric powder
  • 1 tsp. Red chilli powder
  • 1 tbsp. Garam masala
  • 6-7 Green curry leaves
  • 2 Red chillies chopped (optional)
  • Salt to taste

Method:
  1. Heat oil in a large pan.
  2. Add mustard seeds and let them crackle.
  3. Then add the turmeric, chilli and salt.
  4. Mix well. Cook spices for 1-2 mins. Add the curry leaves and chopped chillies.
  5. Now add the chopped, washed cabbage. Mix well.  
  6. Sprinkle the garam masala on the top. Mix again.
  7. Cook uncovered, till the cabbage cooks through. Keep stirring to avoid the cabbage from sticking to the bottom of the pan.Cabbage looses a lot of water & will wilt down a bit. 

Serve as a side dish with some plain chapatti or roti. I like to have mine with some sliced onion and some plain yogurt. 

Tip: I chop my cabbage in a food processor with the coarse shredder attachment. If I am cooking for just two people, I freeze the remaining cabbage in a zip lock bag. It stays well for 2-3 weeks. Before cooking I just let it thaw in the sink, wash it and use it for the recipe.
