Broccoli Fry

Ingredients:
  • 3 Cups Broccoli florets
  • 11/2 tbsp. Olive oil
  • 1/2 tbsp. Mustard seeds
  • 2 tsp. Chili powder (adjust depending on how spicy you want it)
  • 1 tsp. Turmeric powder
  • 4 Cloves of garlic chopped or minced
  • 3 tsp. Coriander powder
  • 3 tsp. Cumin powder
  • 1/2 tbsp. Garam masala
  • 5 tbsp. Gram flour or Besan
  • Salt to taste
  • Water for cooking
Method:

  1. Cut and wash the broccoli.
  2. In a large pan add oil. When hot add the mustard seeds and let them crackle.
  3. Next add the turmeric & chilli powder. Next add the chopped garlic. Cook for 2 minutes or until the garlic becomes slightly golden.
  4. Mix and add the florets. Spice up the florets with coriander, cumin and garam masala powder.
  5. Give everything a good mix. Cover and cook for 5 mins or until the florets cook down. Make sure they are not wilted or mushed down.
  6. Now open the lid and stir the mixture. Add some salt to taste & then add the gram flour. Sprinkle some water to help with the cooking. Use about 2-3 tbsp.
  7. Mix well and cook on a low heat for 2 mins or until the florets start to become crispy.
  8. If you like them tender remove from heat after 2 mins and keep them covered. I like them crispy so I let them cook for longer stirring occasionally for 5 more mins.
Serve with a nice piece of baguette or eat as is.
