Home Made Granola

A very easy, affordable and extremely healthy snack. Works best as a breakfast dish with some greek yogurt, topped with some berries or dry fruits. 
Make ahead on a weekend and you are pretty much sorted for the next two weeks.Mr N snacks a lot and I hate it when he rips into a bag of chips, so having this granola in a container on the dinning table makes me happy and contented. Also works as a dessert topping with vanilla ice cream. 

Ingredients:
  • 1 Cup Rolled oats 
  • ¾ Cup Peanuts ( you can use other nuts of your choice, such as walnuts, pecans  almonds and also dried raisins, cranberries etc.) 
  • 3-4 tbsp. Golden syrup 
  • 1 Cup olive oil 
  • 2 tsp. Ground cinnamon 
  • 1 Cup Brown sugar 
  • ¾ Cup Dark or Semi Sweet Chocolate chips (optional) 
Method:

  1. Pre heat your oven to 150o C.
  2. Spray or grease a large (9x16inch)  baking tray with some olive oil or butter 
  3. In a bowl mix all the dry ingredients, except the chocolate chips. 
  4. In a measuring cup add the oil and pour over the dry mixture, followed by the golden syrup. 
  5. Stir to combine.
  6. Transfer and spread evenly on the baking tray. 
  7. Bake for 30-35 mins, making sure to give it a stir half way through i.e. after 10-15 mins. 
  8. Remove from the oven, and let it stand for 2-3 mins. Immediately add the chocolate chips and mix thoroughly.
  9. Let it rest for 1-2 mins, so it can harden. Immediately break it and store in air tight container for 2 weeks. 
You can eat this as it is or, you can make muffins, granola- yogurt breakfast or  have it with some vanilla ice-cream.
