- 1 cup of All Purpose Flour
- 1 tsp. Cocoa powder (optional)
- 1 tbsp. Brown Sugar
- 2 caps Vanilla eccesence
- Pinch of Salt
- 1 Egg
- 2 tbsp. Melted Butter
- 1 cup Whole Milk
- Icing sugar for sprinkling on top
- For dessert or breakfast use: maple syrup, melted chocolate or Nutella, fresh berries or banana
- For savoury crepes you can use spinach, cheese, crispy potatoes,etc.
Method:

- You can use a hand mixer, whisk or a blender to make the batter- Just whisk or blend the plain flour, milk, sugar, egg, butter, salt and vanilla essence together. Make sure you get rid of all the lumps. Add a pinch of salt.
- You can add some cocoa to the batter to make chocolate crepes. (optional)
To make the crepes:
- Grease a skillet or a pan with some butter or cooking spray.
- Using a ladle or a measuring cup or spoon add about 1/4th cup batter to the hot pan. Immediately run it around the pan to form a thin, even crepe. Cook on each side for 2 minutes.
- Remove on a plate. When they are all stacked up & ready, work on the filling.
- The first couple of crepes will not be soft, but don’t fret once the pan reaches the right temperature they start falling off the griddle.
To make the filling:
- You can use any filling of your choice, chocolate spread, nutella, salsa or ketchup, potato bhaji, cheese & spinach really anything that you would like or have in the pantry can be used.
- However since Mr. N has a sweet tooth and loves something sweet after dinner, I came up with this easy dessert recipe.
- I got the basic crepe recipe and decided to do something different for the filling.
- I had some hazelnut chocolate that I bought from IKEA and some caramel chocolate a friend gifted for Easter So I melted these two chocolates separately, in a microwave safe bowl, with some cream.
- If using nutella make sure you warm it for a few seconds with a few drops of water or milk to get it to a smooth flowing consistency.
To assemble each crepe:
- Spoon some of the chocolate mixture on one semi-circle or one half on the crepe. Spread it evenly with a butter knife
- Fold the other half of the crepe. Sprinkle some icing or powdered sugar and drizzled over some maple syrup.
- When I make these for breakfast, I add some sliced bananas on top of the chocolate.
