Red Velvet Whoopie Pies


I still remember the first time I saw these pies at Starbucks, I wasn't too sure if I would like them, at first you cant really make out if it is a cookie or a pastry? But there was something about the rich creamy white, nestled between two red cheeks, calling out to me. Whoopie pies have the texture of a cake, but are actually cookies, I think that's why they are called "whoopie", since you feel like you are eating a cake without the calories.. :) 
So I ordered a few and absolutely loved them.  Sharing the recipe, so you can enjoy these along with your loved ones with your fav cuppa on this day filled with love and laughter..HAPPY VALENTINE DAY!!    

Ingredients: 
  • 2cups Plain Flour
  • ½ cup Cocoa powder
  • 1tsp. Baking soda
  • 1tsp. Baking powder
  • 1tsp. Salt
  • 1 Egg
  • 1cup Butter milk
  • 1½ tsps. Vanilla essence
  • 6tbsps. Unsalted butter at room temperature
  • 1cup Brown or caster sugar
Filling:
  • 60g Cream cheese
  • 1cup Icing sugar
  • 1-2tsps. Vanilla ecessence
Method: 
I have classified the process in 4 steps. Before you get started, Preheat oven to 180 degree C and line a baking sheet with parchment paper or butter.
  • Baking the Cookies:
  1. Whisk together flour, cocoa, salt, baking soda & powder in a bowl
  2. In a large bowl add the butter and beat till soft. Add in the sugar and mix to combine, followed by the egg and vanilla. 
  3. Slowly add the dry mixture & the butter milk alternately to the butter, sugar & egg mixture. Keep blending till you get a smooth batter. 
  4. Scoop 1 tbsp. batter on the sheet; place the blobs an inch apart, on the lined baking sheet, as they will spread.
  5. Bake for 20 mins, check by inserting a toothpick that should come out clean and the cookies should be springy to touch.After the cookies are baked, let them cool completely for 30 mins.
  • Prepare the filling: While the cookies are baking, mix the cream cheese, icing sugar and vanilla essence together in a bowl. Whisk till stiff, refrigerate the frosting. 
  • Fill the cookies: Scoop the cream cheese filling on one cookie and squeeze the filling by placing the next cookie on the top.
  • If you add a bit more flour, you can use the same batter to make some delicious cup cakes.
