- 2 tbsps. Olive oil
- 3 Spring onions chopped
- 1 Large onion sliced
- 6-8 Sliced Garlic Cloves- Soak in olive oil for 10-15mins (if you use the pink spanish garlic make sure you adjust the chili content as the garlic is also hot)
- 3 Red Chillies & 1 Green Chilli or use Chilli flakes
- 500gm. Tofu or Veg Chicken
- 1tbsp. Soy sauce
- 1tbsp. Oyster sauce
- 4 tbsps. Veg Stock
- ½ cup Basil leaves
- Pepper
Please adjust the chilli content according to your taste.
- In a mortar & pestle add the garlic slices with the oil and chopped chillies. Mince well to form a paste.
- Heat oil in a pan.
- Add the paste give it a stir for 30 secs. Add the sliced onion and cook till its translucent.
- Now add the Veg chicken or Tofu pieces. Stir fry for 2 mins. The garlic and chillies will infuse the tofu with their flavours.
- Next add the sauces and a good crushing of pepper.
- Now add the stock and bring to a boil.
- Lower heat and add the spring onions and basil.
- Cook for another 5 mins on low heat.
- Serve hot with steamed rice.
