Garlic & Chilli Stir Fry

Ingredients: Serves 2-3
  • 2 tbsps. Olive oil
  • 3 Spring onions chopped
  • 1 Large onion sliced
  • 6-8 Sliced Garlic Cloves- Soak in olive oil for 10-15mins (if you use the pink spanish garlic make sure you adjust the chili content as the garlic is also hot) 
  • 3 Red Chillies & 1 Green Chilli or use Chilli flakes
  • 500gm. Tofu or Veg Chicken
  • 1tbsp. Soy sauce
  • 1tbsp. Oyster sauce
  • 4 tbsps. Veg Stock
  • ½ cup Basil leaves
  • Pepper
Please adjust the chilli content according to your taste. 
 Method:
  • In a mortar & pestle add the garlic slices with the oil and chopped chillies. Mince well to form a paste.
  • Heat oil in a pan.
  • Add the paste give it a stir for 30 secs. Add the sliced onion and cook till its translucent.
  • Now add the Veg chicken or Tofu pieces. Stir fry for 2 mins. The garlic and chillies will infuse the tofu with their flavours.
  • Next add the sauces and a good crushing of pepper.
  • Now add the stock and bring to a boil.
  • Lower heat and add the spring onions and basil.
  • Cook for another 5 mins on low heat.
  • Serve hot with steamed rice.
It’s an absolutely simple stir fry dish, you can also add cashews along with the tofu for extra crunch.
