Khajur (Dates) Rabri (Custard)

Ingredients:

  • Milk - 3 cups
  • Water- 3 cups 
  • Dates soft & seedless - 1 bowl
  • Ghee - 1 tsp
  • 2tsps. Cinnamon powder
Method:

  • Wash dates and take out seeds if they are not seedless.
  • Apply ghee in pan. Get it warm and fry dates. Add some cinnamon, this is optional but I like the flavor of cinnamon. You can also substitute with cardamom powder or some dry fruits to your liking
  • Add milk to the dates & let them cook for 5-8mins
  • When the dates are soft, add the water 
  • Let it boil for 15 minutes
  • Remove from heat. Let the mixture cool a bit. Then add 3/4 mixture to a blender & blend till you get a nice thick even consistency

Serve hot or you can refrigerate for a week. You wont believe but this tastes equally sweet without sugar if the dates are sweet enough. Decorate this with pecans as they compliment the color.
