Coconut flavoured Bean Sprout a.k.a Matkichi Usal


 Matkichi Usal 
Ingredients:


  • 1 Cup Sprouted Green gram pulse or green mung - (Please refer the How to sprout beans post  to do this at home)
  • 2 tbsps. Oil
  • 1tsp. Black mustard seeds 
  • Pinch of Asafoetida
  • 1 Large Onion chopped
  • 4 Fat Cloves of Garlic finely chopped
  • 1/2 tsp. Turmeric powder
  • 1-2 tsps. Red chilli powder 
  • 1-2 tsps. Corainder powder (fresh coriander can also be added)
  • 2 tsps. Usal Masala or just use Garam Masala
  • 3 tbsps. Grated coconut 
  • Salt to taste
  • Water for cooking

Method: 


  1. In a pasta pot, or any pot that is tall, add the oil. When oil is hot add mustard seeds, asafoetida.When the seeds crackle, add chopped onion. Cook till it turns   translucent. 
  2. Add turmeric, chilli and cook for 2 minutes. Add coriander powder and cook for another minute. Reduce heat. Add the chopped garlic.
  3. Now add the grated coconut, leave some for garnishing later. Mix well and cook till you get a nice aroma of the roasted coconut and garlic. The aroma of the coconut and garlic is very appetizing. 
  4. At this stage add the Usal masala. Let everything cook and blend together. Add salt to taste. 
  5. Now add the sprouted green gram pulse. Mix well to coat the beans with all the spices. Check seasoning and flavouring. 
  6. Add about a cup of water and cover to cook for 8-10 minutes. If you like add some garam masala at the end and garnish with coconut and coriander

This is, as you can see, Very Healthy. Serve with hot rotis or rice. Very good to bring it to work for a light lunch. 


Alternatively you can add chopped tomatoes and skip adding coconut to make a slightly different version of this dish. Also you can add more water to get more gravy.
