Kanda Batata Bhaji or Potato, onion and tomato mix


 Potato, onion and tomato mix (Kanda Batata Bhaji)




If you have a few tomatoes or potatoes lying around and want to whiz up something tasty for lunch try this recipe.


Ingredients: (Serves 2-3)
  • 1 Onion Sliced
  • 2 Medium Sized Tomatoes Chopped
  • 2 Medium Sized Boiled Potatoes Chopped into cubes
  • ½ Cup Boiled Peas (boil the peas in microwave for few minutes with few tsps. of water)
  • 1 Tbsp. Ginger Garlic Paste
  • ½ Tsp. Turmeric Powder
  • 1Tsp. Red Chilli Powder
  • 1Tsp. Coriander Powder
  • ½ Tsp. Cumin Powder  
  • 1Tbsp. Tomato puree or paste
  • 1½ Tsps. Garam Masala Powder
  • Salt to Taste
Method:
  1. In a pan add some oil. When the oil is hot add some cumin seeds and pinch of asafoetida. Fry the onions till they are translucent or slightly brown
  2. Add the ginger-garlic paste. Mix well and cook for a few minutes
  3. Add the tomatoes and cook for a few minutes   
  4. Add turmeric, chilli powder, coriander powder and cumin powder and let all the spices cook well
  5. Add some tomato paste or puree
  6. Cook everything well for 5 minutes before adding the boiled peas and boiled potatoes
  7. Add some water and cover with a lid. Cook for 5 minutes and then add the garam masala powder.
  8. Add salt to taste

Pack with some rotis or flat bread and carry it to work for a nice tasty lunch
