Indian Dosa -Jamie Oliver Style




Ingredients: 

  • 1 Cup gram flour or chick pea flour
  • 1 Cup plain flour or maida
  • 1 Tsp. Soda bicarb
  • ¼ Tsp. Turmeric Powder
  • Water for batter

Method: 

  1. Add the 2 flours in a bowl. Add soda bicarb, turmeric powder and salt to taste 
  2. Slowly add about ½ cup of water to form a slightly thick but loose batter
  3. On a hot, preferably flat,pan dollop a spoonful of the batter and spread it around in circles to form a nice thin layer of dosa
  4. You can add some ghee or oil on the pan for roasting
  5. Once the bubbles start to arise from the surface turn it over and let both sides cook evenly
  6. If you want the Dosa to be crispy cook a bit longer
Serve with potato bhaji or mint & coriander chutney or ketchup


Recipe for Potato Bhaji  or 
Mashed potatoes with spices


Ingredients: Serves 2

  • 2 large brown potatoes boiled
  • 1/2 Cup boiled peas (optional) 
  • 1Onion sliced  
  • 2 Tsps. Oil
  • 1 Tsp. Black mustard seeds or mohri
  • Pinch of asafoetida
  • 5-6 Green curry leaves
  • 2-3 Green or Red chillies chopped
  • ½ Tsp. Turmeric powder
  • 1 Tsp. Red chilli powder
  • 1 Tsp. Coriander powder
  • 1-2 Tsps. Garam Masala
  • Salt to taste
  • Some water for cooking

Method:


  1. Heat oil in a pan. Add mustard seeds, asafoetida, curry leaves and chopped chillies. Mix well & cook for 1-2 minutes
  2. Now add the onion and sauté for 5 minutes or till it turns golden brown
  3. Add turmeric, chilli powder, coriander powder and salt to taste
  4. Cut the boiled potatoes into roughly 1 inch cubes and add them to the onion mixture
  5. Mix well till potatoes have absorbed all the spices
  6. Add the peas at this stage 
  7. Add some water so the mixture doesn’t burn
  8. Cook for another 5-10 minutes. Now add the garam masala, check seasoning and let the mixture cool before you serve it with the dosa

Garnish with fresh chopped coriander
