Indian Dosa -Jamie Oliver Style
Ingredients:
- 1 Cup gram flour or chick pea flour
- 1 Cup plain flour or maida
- 1 Tsp. Soda bicarb
- ¼ Tsp. Turmeric Powder
- Water for batter
Method:
- Add the 2 flours in a bowl. Add soda bicarb, turmeric powder and salt to taste
- Slowly add about ½ cup of water to form a slightly thick but loose batter
- On a hot, preferably flat,pan dollop a spoonful of the batter and spread it around in circles to form a nice thin layer of dosa
- You can add some ghee or oil on the pan for roasting
- Once the bubbles start to arise from the surface turn it over and let both sides cook evenly
- If you want the Dosa to be crispy cook a bit longer
Recipe for Potato Bhaji or
Mashed potatoes with spices
Ingredients: Serves 2
- 2 large brown potatoes boiled
- 1/2 Cup boiled peas (optional)
- 1Onion sliced
- 2 Tsps. Oil
- 1 Tsp. Black mustard seeds or mohri
- Pinch of asafoetida
- 5-6 Green curry leaves
- 2-3 Green or Red chillies chopped
- ½ Tsp. Turmeric powder
- 1 Tsp. Red chilli powder
- 1 Tsp. Coriander powder
- 1-2 Tsps. Garam Masala
- Salt to taste
- Some water for cooking
Method:
- Heat oil in a pan. Add mustard seeds, asafoetida, curry leaves and chopped chillies. Mix well & cook for 1-2 minutes
- Now add the onion and sauté for 5 minutes or till it turns golden brown
- Add turmeric, chilli powder, coriander powder and salt to taste
- Cut the boiled potatoes into roughly 1 inch cubes and add them to the onion mixture
- Mix well till potatoes have absorbed all the spices
- Add the peas at this stage
- Add some water so the mixture doesn’t burn
- Cook for another 5-10 minutes. Now add the garam masala, check seasoning and let the mixture cool before you serve it with the dosa
Garnish with fresh chopped coriander
