Healthy Beet Root Soup


This is the beet root soup recipe by Nigella Lawson. You can also have this cold as a breakfast drink. Needless to say it is very healthy and filling.

Ingredients- Serves 4

  • I use 3-4 medium sized or 1 large and 1 small beet root for this
  • 1 Tsp. Cumin powder
  • 2 Tsps. Coriander powder
  • 1 litre Vegetable stock – Add 1-2 Tbsps. Veg stock powder to a litre of hot water. Stir an mix well
  • 2 Small spring onions
  • Salt and pepper to taste
  • 150 ML Cream

Method:

  1. Roast the beet roots covered in a foil for 40 minutes in a   pre-heated oven at 250 degree c
  2. Remove the skin. Chop them into chunky cubes
  3. Prepare the veg stock
  4. In a blender add the cubes, cumin & coriander powder, salt and pepper to taste
  5. Add some stock and blend to form a nice thick soup
  6. Decant everything into the remaining stock. Add the spring onions to the hot soup and leave it to cool for 10 minutes. In the meanwhile the spring onion flavours are also infused into the soup

After 10-15 minutes remove the spring onions, add some fresh cream, mix everything together and serve in a glass or soup bowl. 
It is the fastest consumed soup :)
