Ingredients: Serves 2
- 1 frozen packet of Okra
- 1 tsp. Mustard Seeds
- 1 tsp. Turmeric Powder
- 1 tsp. Coriander Powder
- 2 Medium – large boiled potatoes chopped into cubes
- 1½ tsp. Oil for cooking
Method:
- Wash and dry the okra. Cut them into roughly 1-2 cm pieces
- Add oil to a medium sized pan. When hot add mustard seeds and asafoetida
- Add turmeric & chilli powder
- Add the cut, dried okra and mix everything well
- Cover and let it cook on a low-medium heat. Keep stirring occasionally till the okra is cooked well. It helps to run a wooden spoon in the okra so the sticky strings are adhere to the spoon.
- When the okra is nearly cooked add the chopped boiled potatoes, remaining spices, salt and let everything cook for 5 minutes
- Turn off the heat and let it carry on cooking in its heat for 5-10 minutes
- Serve hot garnished with coriander, lemon and few slices of onions
