Okra & Potato Sabji or Bhendi chi bhaji



Ingredients: Serves 2
  • 1 frozen packet of Okra
  • 1 tsp. Mustard Seeds
  • 1 tsp. Turmeric Powder
  • 1 tsp. Coriander Powder
  • 2 Medium – large boiled potatoes chopped into cubes
  • 1½ tsp. Oil for cooking

Method:
  1. Wash and dry the okra. Cut them into roughly 1-2 cm pieces
  2. Add oil to a medium sized pan. When hot add mustard seeds and asafoetida
  3. Add turmeric & chilli powder
  4. Add the cut, dried okra and mix everything well
  5. Cover and let it cook on a low-medium heat. Keep stirring occasionally till the okra is cooked well. It helps to run a wooden spoon in the okra so the sticky strings are adhere to the spoon.
  6. When the okra is nearly cooked add the chopped boiled potatoes, remaining spices, salt and let everything cook for 5 minutes
  7. Turn off the heat and let it carry on cooking in its heat for 5-10 minutes
  8. Serve hot garnished with coriander, lemon and few slices of onions


Serve with roti/bread/pita bread
