Aloo Palak or Spinach with Potato

excellent to take with you if you are travelling or just going to work. nice and dry veggie dish and stays well

Ingredients – Serves 2
  • 1 Packet of Frozen Heinz Spinach or 1 ½ Cups of Chopped Fresh Spinach
  • 2 Brown Potatoes Peeled Boiled & Cut Into Cubes
  • 1 ½ Tsps. Mustard Seeds
  • Pinch of Asafoetida
  • 1 Large Finely Chopped Onion
  • 5 Cloves of Garlic Finely Chopped or Minced
  • ¾ Tsp. Turmeric Powder
  • 1 Tsp. Red Chilli Powder
  • 50 Ml Full fat milk or cream 
  • 1½ Tsp. Coriander Powder
  • 2 Tsps. Garam Masala
  • 1 Tbsp. Oil
  • Salt to taste

Method
  1. Heat the oil in a pan. Add mustard seeds and asafoetida. Mix with a spoon
  2. Add the chopped onion. Fry till onions become brown or translucent. Add a pinch of salt to stop the onions from burning
  3. Add the garlic and let everything cook for about 3 minutes till a nice aroma fills the kitchen
  4. Add turmeric & chilli powder. Let the spices cook for about 3 minutes. Now add the spinach. Mix everything well. add the milk or cream
  5. On medium heat cook the spinach for 5-7 minutes. With the lid on.
  6. Open the lid and add the coriander powder. Mix well. Cook for 1-2 minutes before adding the potatoes. you may mash some of the potatoes or leave them in cubes 
  7. Now add the garam masala. Mix and cook covered on low heat for 5-7 minutes or until the spinach is cooked through
  8. Don’t overcook as the spinach starts losing its nutritional content
Tip- Add few tbsps. of water while cooking if using spinach leaves or even other wise if the mixture becomes too hot

Serve with roti or flat bread and some chopped onions
